Ingredients

The crust

  • 1 cup graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 tablespoons white granulated sugar
  • ¼ teaspoon kosher salt

The filling

  • ½ cup white granulated sugar
  • 4 ounces cream cheese
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • a pinch cardamom
  • a pinch cloves
  • 2 large eggs
  • 1 cup pure pumpkin puree

The chocolate swirl

  • 1 tablespoon heavy cream
  • 2 tablespoons melted semi-sweet chocolate

For serving

  • whipped cream

Instructions

  1. Preheat the oven to 375°F.
  2. Combine graham cracker crumbs, melted butter, sugar, and salt in a bowl and press into a tart pan.
  3. Bake the crust for 5 minutes.
  4. In a mixer, beat cream cheese and sugar until smooth.
  5. Add flour, spices, eggs, and pumpkin puree, mixing until combined.
  6. For the chocolate swirl, mix a portion of the filling with heavy cream and melted chocolate.
  7. Pour the pumpkin filling into the crust, dollop the chocolate mixture on top, and swirl together.
  8. Bake for 15-18 minutes until just set, then cool to room temperature and refrigerate for at least 2 hours before serving.
