Ingredients

The cake

  • cups all purpose flour
  • 1 cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon white vinegar
  • 5 tablespoons olive oil
  • ¾ cup water
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup blueberries

The frosting

  • 3 tablespoons cream cheese
  • tablespoons butter
  • cup powdered sugar

Instructions

  1. Preheat the oven to 180C/350F and prepare an 8-inch cake pan.
  2. In a large bowl, mix the dry ingredients together.
  3. Add the wet ingredients to the dry mixture and fold in the blueberries.
  4. Pour the batter into the prepared cake pan and bake for 35-40 minutes.
  5. Let the cake cool completely before frosting it.
  6. For the frosting, beat the cream cheese and butter until fluffy, then mix in the powdered sugar.
