Easy Jambalaya

oysters (shucked, optional)

Instructions
- 1. In a large soup pot, combine butter and sausage (or bacon) over high heat and cook for about 6 minutes, stirring occasionally.
- 2. Add bell pepper, onion, celery, garlic, Creole seasoning, salt, and pepper. Sauté over high heat for about 8 minutes until veggies are browned.
- 3. Stir in tomatoes, shrimp, and bay leaves, cooking for a couple of minutes.
- 4. Add rice, then pour in broth and water, stirring gently to prevent sticking.
- 5. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until rice is tender.
- 6. Turn off heat, fold in oysters if using, cover, and let sit for 8 minutes.
- 7. Garnish with green onions and serve.
