Instructions
- Soak the beans overnight in water, ensuring they are covered by 2 inches.
- The next day, seal the pressure cooker and cook the beans at high pressure for 20 minutes.
- While the beans are cooking, heat olive oil in a skillet and sauté garlic, tomato paste, cilantro, onion, pepper, and bouillon for about 10 minutes.
- Once the beans are done, puree 25% of them along with some liquid in a blender and return to the pot.
- Add adobo seasoning and salt to the beans, then mix in the sautéed vegetables.
- Bring to a boil and simmer until the mixture is creamy and thick, stirring often.
- Remove the cilantro, onion, and pepper before serving.
- Serve the beans over rice.
