Ingredients

The beans

  • 1 lb dried red kidney beans

The aromatics

  • 2 tablespoons olive oil
  • 6 cloves crushed garlic
  • 1 tablespoon tomato paste
  • ¼ bunch cilantro sprigs
  • 1 medium red onion
  • 1 medium cubanelle pepper

The seasoning

  • 2 cubes chicken bouillon
  • 1 ½ teaspoons adobo seasoning
  • to taste kosher salt

For serving

  • white rice

Instructions

  1. Soak the beans overnight in water, ensuring they are covered by 2 inches.
  2. The next day, seal the pressure cooker and cook the beans at high pressure for 20 minutes.
  3. While the beans are cooking, heat olive oil in a skillet and sauté garlic, tomato paste, cilantro, onion, pepper, and bouillon for about 10 minutes.
  4. Once the beans are done, puree 25% of them along with some liquid in a blender and return to the pot.
  5. Add adobo seasoning and salt to the beans, then mix in the sautéed vegetables.
  6. Bring to a boil and simmer until the mixture is creamy and thick, stirring often.
  7. Remove the cilantro, onion, and pepper before serving.
  8. Serve the beans over rice.
