Ingredients

The Chicken and Veggies

  • pounds boneless skinless chicken thighs, cut into 1½-inch cubes
  • 1 pound French green beans
  • 1 cup cherry tomatoes
  • ½ cup Castelvetrano olives, pitted
  • 1 small red onion, cut into ½-inch wedges
  • 2 cloves garlic, minced

The Seasoning and Oil

  • 2 teaspoons Magic Mushroom Powder
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons aged balsamic vinegar
  • ¼ cup minced fresh Italian parsley and/or fresh basil

Instructions

  1. Preheat the oven to 425°F on convection mode or 450°F on regular mode.
  2. Place the chicken, green beans, cherry tomatoes, olives, onions, and garlic on a sheet pan.
  3. Season with Magic Mushroom Powder and drizzle with olive oil.
  4. Combine the ingredients to ensure they are well coated.
  5. Spread everything in a single layer on the sheet pan.
  6. Roast in the oven for 15 to 25 minutes, rotating halfway through.
  7. Check that the chicken is cooked through and the veggies are blistered.
  8. Drizzle with balsamic vinegar, sprinkle with herbs, and serve.
