Ingredients

Bottom Layer

  • 2 cups All Purpose Flour
  • 1 cup Sugar
  • ¼ cup Brown Sugar
  • 1 tsp Baking Powder
  • 1 Large Organic Egg
  • 4 oz Melted Butter
  • 1 tbsp Vanilla Extract
  • ¼ cup Fresh Pineapple Juice

Top Layer

  • 8 oz Cream Cheese
  • 4 oz Creme Fraiche
  • 3 Large Organic Eggs
  • 1 tbsp Vanilla Extract
  • ½ tbsp Almond Extract
  • ¼ cup Fresh Pineapple Juice
  • 3 oz Melted Butter
  • 3 cups Powered Sugar
  • 3 slices Pineapple Slices
  • 3 pieces Maraschino Cherries

Instructions

  1. Preheat the oven to 350°F and butter a cast iron skillet.
  2. In a large bowl, combine flour, baking powder, sugar, and brown sugar, then whisk together.
  3. Add melted butter and vanilla extract, whisking until combined.
  4. Incorporate the beaten egg and pineapple juice, mixing until smooth without over-whisking.
  5. Spread the mixture evenly in the prepared skillet.
  6. In another bowl, blend cream cheese, Creme Fraiche, vanilla extract, almond extract, pineapple juice, and melted butter until smooth.
  7. Add the eggs one at a time while blending, then mix in the powdered sugar until smooth.
  8. Pour the cream cheese mixture over the bottom layer and spread evenly.
  9. Bake for 45 to 50 minutes, then cool for 30 minutes.
  10. Top with pineapple slices and maraschino cherries, sprinkle with powdered sugar, and serve.
