Ingredients

The Meatballs

  • 1 lb ground beef
  • ¾ cup cooked lentils
  • ½ medium yellow onion
  • 1 large egg
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried ginger
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon avocado oil or olive oil

The Sauce

  • 1 15-ounce can tomato sauce
  • 1 15-ounce can coconut milk
  • 2 teaspoons ground cumin
  • 1 teaspoon dried ginger
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon cornstarch

Instructions

  1. Combine ground beef, cooked lentils, onion, egg, garlic, and spices in a bowl and mix well.
  2. Form the mixture into approximately 20 meatballs.
  3. Heat oil in a skillet and brown the meatballs on one side for 5-6 minutes.
  4. Mix tomato sauce, coconut milk, cumin, ginger, chili powder, salt, and pepper in a bowl.
  5. Turn the meatballs to brown the other side, then pour the sauce over them.
  6. Cover and simmer for 15 minutes.
  7. Combine cornstarch with a bit of liquid from the pan to create a slurry, then stir it into the sauce to thicken.
