Ingredients

The beef

  • 2 lbs raw lean trimmed round beef roast, cut into 1” cubes

The coating

  • ¼ cup flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper

The vegetables

  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 3 medium potatoes, cubed
  • 4 medium carrots, peeled and chopped

The seasonings

  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley flakes
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce

The broth

  • 1 ½ cups fat free beef broth

Instructions

  1. Place the beef cubes in a large Ziploc bag.
  2. Combine the flour, salt, and pepper in a small dish and pour it over the beef in the bag.
  3. Seal the bag and shake until the beef is well coated.
  4. Pour the beef into the slow cooker.
  5. Add all remaining ingredients over the beef and stir to combine.
  6. Cook on low for 9-10 hours.
