Crispy Beer-Battered Vegan Fish Tacos

Ingredients

Pico de Gallo

  • ½ small onion onion
  • 1 small tomato
  • 1 whole chili pepper
  • 3 tablespoons parsley
  • juice of 3 small limes lime juice
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper

To Assemble Tacos

  • 1 batch vegan fish sticks
  • 1 batch vegan tartar sauce
  • 1 handful pickled cabbage or pickled onions
  • 2 limes limes
  • 2 tablespoons parsley
  • 5 taco soft shells tortillas

Instructions

  1. Make the pico de gallo by mixing all the ingredients in a bowl and set aside.
  2. Warm the tortillas in a skillet with olive oil until golden brown and puffy, then set aside.
  3. Assemble the tacos by layering pico de gallo, pickled veggies, crispy fish sticks, vegan tartar sauce, and chopped parsley on each tortilla.
  4. Serve with lime wedges for squeezing over the tacos.
