Ingredients

The base

  • 1 cup cottage cheese
  • 8 large eggs
  • ¼ teaspoon salt
  • pinch black pepper

The add-ins

  • ¼ to ½ cup crumbled feta cheese
  • ½ cup chopped spinach
  • ½ cup chopped bell pepper
  • ½ cup chopped ham or other cooked meat (optional)

Instructions

  1. Preheat the oven to 350°F and grease a nonstick muffin tin.
  2. Blend cottage cheese, eggs, salt, and pepper until smooth.
  3. Add feta cheese and pulse until finely chopped.
  4. Distribute chopped veggies and meat into each muffin cup.
  5. Pour egg mixture over the veggies and meat until cups are ½ to ¾ full.
  6. Bake for 20-25 minutes until set in the center.
  7. Cool slightly before removing from the pan. Serve warm, room temperature, or chilled.
