Instructions
- Preheat the oven to 350°F and grease a nonstick muffin tin.
- Blend cottage cheese, eggs, salt, and pepper until smooth.
- Add feta cheese and pulse until finely chopped.
- Distribute chopped veggies and meat into each muffin cup.
- Pour egg mixture over the veggies and meat until cups are ½ to ¾ full.
- Bake for 20-25 minutes until set in the center.
- Cool slightly before removing from the pan. Serve warm, room temperature, or chilled.
