Vegetarian Bean and Cheese Enchiladas

flour tortillas, 6-8 inches, lightly warmed

Monterey Jack cheese, grated

cilantro, finely chopped

Instructions
- Preheat the oven to 425ºF.
- Spread ½ cup of enchilada sauce in a 10-inch baking dish.
- On a tortilla, spread 2 to 3 tablespoons of black beans and a light sprinkling of cheese, then roll it up and place seam side down in the baking dish.
- Repeat with the remaining tortillas until the dish is filled.
- Spread another ½ cup of enchilada sauce over the rolled tortillas, then sprinkle with cilantro and scallions, and top with the remaining cheese.
- Bake for 15 to 20 minutes, or until the cheese is beginning to blister.
- Let cool briefly before serving.
