Vegetarian Bean and Cheese Enchiladas

Ingredients

  • 1 cup enchilada sauce
  • 7 to 8 pieces flour tortillas, 6-8 inches, lightly warmed
  • cups cooked black beans
  • 4 ounces Monterey Jack cheese, grated
  • ½ cup cilantro, finely chopped
  • 4 pieces scallions, thinly sliced

Instructions

  1. Preheat the oven to 425ºF.
  2. Spread ½ cup of enchilada sauce in a 10-inch baking dish.
  3. On a tortilla, spread 2 to 3 tablespoons of black beans and a light sprinkling of cheese, then roll it up and place seam side down in the baking dish.
  4. Repeat with the remaining tortillas until the dish is filled.
  5. Spread another ½ cup of enchilada sauce over the rolled tortillas, then sprinkle with cilantro and scallions, and top with the remaining cheese.
  6. Bake for 15 to 20 minutes, or until the cheese is beginning to blister.
  7. Let cool briefly before serving.
