Instructions
- Toast the cinnamon sticks, cloves, and star anise in a pot until fragrant.
- Add onion, ginger, vegetable stock, water, and tamari to the pot, bring to a boil, then simmer for 30 minutes.
- Cook the rice noodles according to package directions and set aside.
- Sauté shiitake mushrooms in oil with salt until tender and browned, then set aside.
- Strain the broth to remove solids and season to taste with tamari and salt.
- Ladle broth into bowls, add noodles and mushrooms, and garnish with sprouts, herbs, and lime.
