Vegetarian Pho

Ingredients

Soup

  • 2 pieces cinnamon sticks
  • 3 whole cloves
  • 2 pieces star anise
  • 1 large white onion
  • 4 inches fresh ginger
  • 4 cups vegetable stock or broth
  • 4 cups water
  • 2 tablespoons reduced-sodium tamari or soy sauce
  • 6 ounces rice noodles
  • 1 tablespoon avocado oil
  • 5 ounces shiitake mushrooms
  • to taste salt

Garnishes

  • to taste mung bean sprouts
  • to taste fresh basil
  • to taste fresh mint
  • to taste green onions
  • to taste fresh jalapeño
  • to taste lime

Instructions

  1. Toast the cinnamon sticks, cloves, and star anise in a pot until fragrant.
  2. Add onion, ginger, vegetable stock, water, and tamari to the pot, bring to a boil, then simmer for 30 minutes.
  3. Cook the rice noodles according to package directions and set aside.
  4. Sauté shiitake mushrooms in oil with salt until tender and browned, then set aside.
  5. Strain the broth to remove solids and season to taste with tamari and salt.
  6. Ladle broth into bowls, add noodles and mushrooms, and garnish with sprouts, herbs, and lime.
