Instructions
- Crumble the graham crackers using a food processor or crush them in a ziplock bag.
- Combine the crumbled graham crackers, melted butter, and light brown sugar in a large bowl.
- Pack the crust tightly around the bottom and edges of your pie pan and chill for one hour.
- In another large bowl, beat the softened cream cheese until smooth.
- Blend in the sweetened condensed milk until smooth.
- Add the lemon juice and lemon zest, then whip for an additional 2 minutes.
- Pour the filling into the graham cracker crust and chill for at least 4 hours to set.
