Ingredients

The crust

  • 10–12 whole Graham Crackers, crumbled
  • 6–8 tbsp Butter, melted
  • ¼ cup Light Brown Sugar, packed

The filling

  • 8 oz Philadelphia Cream Cheese, softened
  • 14 oz Sweetened Condensed Milk
  • ½ cup Lemon Juice
  • 1 tbsp Lemon Zest

Instructions

  1. Crumble the graham crackers using a food processor or crush them in a ziplock bag.
  2. Combine the crumbled graham crackers, melted butter, and light brown sugar in a large bowl.
  3. Pack the crust tightly around the bottom and edges of your pie pan and chill for one hour.
  4. In another large bowl, beat the softened cream cheese until smooth.
  5. Blend in the sweetened condensed milk until smooth.
  6. Add the lemon juice and lemon zest, then whip for an additional 2 minutes.
  7. Pour the filling into the graham cracker crust and chill for at least 4 hours to set.
