Pasta with Creamy Eggplant-Walnut Pasta Sauce

Ingredients

The sauce

  • 2 large eggplants
  • 3 tablespoons olive oil
  • ½ cup walnut halves
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon light miso
  • 2 cloves garlic
  • 2 medium shallots
  • ¼ cup fresh dill
  • 1 teaspoon ground cumin
  • ½ teaspoon chili flakes
  • sea salt to taste
  • black pepper to taste

The pasta

  • 1 lb shaped pasta of choice

The topping

  • 2 cups fresh bread crumbs

Instructions

  1. Preheat a grill to high and char the eggplants until soft.
  2. Make the spiced bread crumbs by sautéing them with olive oil, cumin, chili flakes, salt, and pepper until toasted.
  3. Blend the cooled eggplant flesh with walnuts, lemon juice, miso, garlic, and seasoning until smooth.
  4. Cook the pasta according to package instructions and reserve some cooking water.
  5. Sauté shallots and remaining garlic in olive oil until soft, then add the eggplant sauce and pasta.
  6. Combine everything, adding reserved pasta water as needed, and serve topped with spiced bread crumbs and extra dill.
