Instructions
- Preheat a grill to high and char the eggplants until soft.
- Make the spiced bread crumbs by sautéing them with olive oil, cumin, chili flakes, salt, and pepper until toasted.
- Blend the cooled eggplant flesh with walnuts, lemon juice, miso, garlic, and seasoning until smooth.
- Cook the pasta according to package instructions and reserve some cooking water.
- Sauté shallots and remaining garlic in olive oil until soft, then add the eggplant sauce and pasta.
- Combine everything, adding reserved pasta water as needed, and serve topped with spiced bread crumbs and extra dill.
