Ingredients

The cake

  • 2 large eggs
  • ½ cup sugar
  • ½ cup milk of choice
  • ½ cup unsweetened applesauce
  • 1 teaspoon pure vanilla extract
  • 2 cups gluten-free flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon allspice
  • teaspoon ground cloves
  • ¼ teaspoon fine salt
  • cup dark raisins
  • 1 cup shredded carrots
  • ½ cup chopped walnuts

The cream cheese frosting (optional)

  • ¼ cup cream cheese
  • 1 tablespoon unsalted butter
  • ½ teaspoon pure vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon milk of choice

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 or 9x9 baking pan.
  2. Soak the raisins in hot water and set aside.
  3. In a bowl, cream together the eggs and sugar, then add applesauce, milk, and vanilla.
  4. Mix in flour, baking soda, baking powder, cinnamon, allspice, cloves, and salt.
  5. Fold in the drained raisins, shredded carrots, and walnuts.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes.
  7. Cool completely before frosting.
  8. For the frosting, blend cream cheese, butter, and vanilla, then mix in powdered sugar and milk until smooth.
  9. Spread the frosting over the cooled bars and garnish if desired.
