Homemade Chicken Noodle Soup

Ingredients

  • 2 tablespoons olive oil or butter
  • 1 medium onion, finely chopped
  • 1 medium carrot, peeled and chopped
  • 1 rib celery, chopped
  • 8 cups chicken broth
  • 3 cups cooked chicken, chopped or shredded
  • 2 teaspoons fresh thyme, minced
  • 1 leaf bay leaf
  • 8 ounces wide egg noodles
  • to taste salt and freshly ground black pepper
  • to taste fresh parsley, minced, for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat until shimmering.
  2. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  3. Stir in broth, chicken, thyme, and bay leaf; bring to a simmer and cook until vegetables are tender, about 15 minutes.
  4. Add noodles and cook until tender, about 5 minutes longer.
  5. Remove from heat, season with salt and pepper, and garnish with fresh parsley.
