Ingredients

The roast

  • 2.5-3.5 pounds beef roast (chuck, top, or bottom round)

Seasoning and flavoring

  • 1 tablespoon steak seasoning
  • 1 large onion
  • 10 cloves garlic
  • ¼ cup red wine vinegar
  • 1 packet onion soup mix

Liquid

  • 2 cups vegetable or beef stock

Instructions

  1. Trim excess fat from the roast and slice it into 1-inch slices.
  2. Heat olive oil in the Instant Pot on the sauté setting.
  3. Sprinkle steak seasoning on the roast slices and rub it in.
  4. Sear the roast slices in the hot oil for 2-3 minutes on each side.
  5. Remove the seared roast and sauté the sliced onion for 2-3 minutes.
  6. Add smashed garlic and sauté for an additional minute.
  7. Add red wine vinegar (or wine), broth, seared roast, and onion soup mix, stirring to combine.
  8. Cook on high pressure for 40 minutes using the manual setting.
  9. Allow the pressure to release naturally for 10 minutes, then release any excess pressure.
  10. Shred the roast to your preference and serve with the cooking liquid.
