Pressure Cooker Pot Roast

Instructions
- Trim excess fat from the roast and slice it into 1-inch slices.
- Heat olive oil in the Instant Pot on the sauté setting.
- Sprinkle steak seasoning on the roast slices and rub it in.
- Sear the roast slices in the hot oil for 2-3 minutes on each side.
- Remove the seared roast and sauté the sliced onion for 2-3 minutes.
- Add smashed garlic and sauté for an additional minute.
- Add red wine vinegar (or wine), broth, seared roast, and onion soup mix, stirring to combine.
- Cook on high pressure for 40 minutes using the manual setting.
- Allow the pressure to release naturally for 10 minutes, then release any excess pressure.
- Shred the roast to your preference and serve with the cooking liquid.
