Ingredients

  • 2 eggs eggs
  • 1 tbsp vanilla extract
  • ½ cup coconut sugar or brown sugar
  • ¼ cup unsweetened apple sauce
  • 1 cup white whole wheat flour
  • ½ cup unsweetened cocoa powder
  • tsp baking soda
  • ½ tsp salt
  • 2 cups shredded zucchini
  • ½ cup mini chocolate chips
  • ¼ cup mini chocolate chips (for topping)

Instructions

  1. 1. Preheat the oven to 350°F and grease an 8x8 baking dish.
  2. 2. In a large bowl, mix the eggs, vanilla, coconut sugar, and apple sauce.
  3. 3. In another bowl, combine the flour, cocoa powder, baking soda, and salt.
  4. 4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. 5. Gently fold in the zucchini and ½ cup of chocolate chips.
  6. 6. Pour the batter into the prepared baking dish and sprinkle the remaining chocolate chips on top.
  7. 7. Bake for about 30 minutes or until set. Allow to cool before serving.
