Potato Leek Soup

Instructions
- Melt the bacon fat in a large pot.
- Sauté the leeks over medium heat for 5 minutes, adding water if they start to brown.
- Add the potatoes and broth, bring to a boil, then simmer for 30 minutes.
- Puree the soup with an immersion blender and season with salt if needed.
- Serve warm, garnished with croutons or herbs if desired.
