Ingredients

The sauce

  • 1–2 tablespoon whole-grain mustard

The pasta

  • 8 ounces uncooked pasta

Finishing touches

  • ½ to ¾ cup sour cream

Instructions

  1. 1. Heat oil in a large skillet over medium heat and sauté onion, garlic, and mushrooms until mushrooms release their liquid.
  2. 2. Add the cooking sherry and cook until it evaporates.
  3. 3. Stir in flour and cook for a minute, then add broth, salt, pepper, and mustard, scraping up any browned bits.
  4. 4. Let the sauce simmer and thicken.
  5. 5. Stir in the cooked pasta and sour cream, adjusting seasoning to taste.
