Instructions
- Cook the butternut squash according to package directions and drain.
- Divide the quinoa, black beans, butternut squash, cheese, and salsa among serving bowls.
- Spray a skillet with avocado oil and fry the eggs to your desired doneness.
- Place the fried eggs on top of the bowls and add sliced avocado.
- Garnish as desired.
