Ingredients

The bowl

  • 1 package Butternut Squash Green Giant Veggie Spirals
  • 2 cups cooked quinoa
  • 1 cup cooked black beans
  • 2 ounces cheddar cheese, shredded
  • ΒΌ cup fresh salsa
  • 4 large eggs
  • 1 medium avocado, sliced

For serving

  • to taste lime juice
  • to taste flaky salt
  • to taste crushed red pepper
  • to taste cilantro

Instructions

  1. Cook the butternut squash according to package directions and drain.
  2. Divide the quinoa, black beans, butternut squash, cheese, and salsa among serving bowls.
  3. Spray a skillet with avocado oil and fry the eggs to your desired doneness.
  4. Place the fried eggs on top of the bowls and add sliced avocado.
  5. Garnish as desired.
