The crust

Instructions
- Preheat the oven to 375°F and press the tofu.
- Dust a 9-inch pie dish with flour and pre-bake the pie crust for 10 minutes.
- In a skillet, heat coconut oil and caramelize the onions for about 15 minutes.
- Add tomatoes, garlic, and mushrooms to the skillet and sauté for 15 minutes, then add spinach until wilted.
- In a blender, combine tofu, vegan milk, nutritional yeast, sea salt, black pepper, turmeric, chives, baking powder, and vegan parmesan, then blend until smooth.
- Transfer the vegetable mixture to the pie crust and pour the tofu mixture over it, stirring to combine.
- Bake for 35 to 40 minutes until golden brown and set, then cool for 10 minutes before slicing.
