Ingredients

The filling

  • 1 lb firm tofu
  • 2 tablespoons oil
  • ½ large red onion
  • 1 cup cherry tomatoes
  • 4 cloves garlic
  • ¾ cup mushrooms
  • 2 cups fresh spinach
  • 1 cup vegan milk
  • 3 tablespoons nutritional yeast
  • ¾ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon turmeric
  • 2 teaspoons dried chives
  • ½ teaspoon baking powder
  • 1 tablespoon vegan parmesan
  • ¼ teaspoon kala namak

The crust

  • 1 pie crust flaky gluten-free pie crust

Instructions

  1. Preheat the oven to 375°F and press the tofu.
  2. Dust a 9-inch pie dish with flour and pre-bake the pie crust for 10 minutes.
  3. In a skillet, heat coconut oil and caramelize the onions for about 15 minutes.
  4. Add tomatoes, garlic, and mushrooms to the skillet and sauté for 15 minutes, then add spinach until wilted.
  5. In a blender, combine tofu, vegan milk, nutritional yeast, sea salt, black pepper, turmeric, chives, baking powder, and vegan parmesan, then blend until smooth.
  6. Transfer the vegetable mixture to the pie crust and pour the tofu mixture over it, stirring to combine.
  7. Bake for 35 to 40 minutes until golden brown and set, then cool for 10 minutes before slicing.
