Instructions
- Prepare the honey simple syrup by mixing equal parts honey and water in a pot over medium-low heat, optionally infusing with bay leaves.
- Mix salt and sugar for the rim and coat the rim of the glass with this mixture after rubbing it with a lime or grapefruit wedge.
- In a shaker filled with ice, combine grapefruit juice, lime juice, tequila, and honey simple syrup, then shake well.
- Pour the mixture into the prepared glass filled with ice and top with sparkling mineral water.
- Garnish with a slice of grapefruit and a bay leaf before serving.
