Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a large mixing bowl, combine all ingredients and mix until creamy.
- Scoop tablespoon-sized dollops onto the baking sheets, leaving space between each cookie.
- Sprinkle additional cinnamon and coconut sugar on top of the cookies.
- Bake for 11-12 minutes, or until the edges are golden brown.
- Let the cookies cool completely before removing them from the parchment paper.
