Instructions
- Line two 8-inch cake pans with plastic wrap and spread vanilla ice cream in one and chocolate ice cream in the other, then freeze until firm.
- Preheat the oven to 350°F and prepare a cake pan with grease and parchment paper.
- In a bowl, mix dry ingredients for the chocolate cake, then beat wet ingredients in another bowl.
- Combine wet and dry ingredients, then stir in hot coffee and chocolate chips.
- Pour batter into the pan and bake for 25-30 minutes, then let cool.
- Prepare the chocolate fudge by melting chocolate and cream in a saucepan, then stir in butter, vanilla, and salt.
- Assemble the cake by layering chocolate cake, fudge, cookie crumbs, vanilla ice cream, more fudge, chocolate ice cream, and remaining fudge.
- Return the assembled cake to the freezer until firm before serving.
