Instructions
- Cream the butter and sugar together until combined.
- Add the egg, molasses, vinegar, and vanilla, mixing until smooth.
- In a separate bowl, combine the dry ingredients and spice mix.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Cover the dough and chill for at least 3 hours or overnight.
- Preheat the oven to 350°F.
- Roll out the dough to ¼ inch thickness and cut out cookies.
- Place the cookies on lined baking sheets, spaced about 1 inch apart.
- Bake the cookies until they spring back when touched, adjusting time based on size.
- Cool the cookies on a baking sheet for a few minutes before transferring to a wire rack.
