Ingredients

The dough

  • 1 cup butter, softened
  • 1 cup light brown sugar
  • 1 large egg
  • 1 cup molasses (not blackstrap)
  • 1 tablespoon apple cider vinegar or white wine vinegar
  • 2 teaspoons vanilla extract

The dry ingredients

  • 5 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

The spice mix

  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

Instructions

  1. Cream the butter and sugar together until combined.
  2. Add the egg, molasses, vinegar, and vanilla, mixing until smooth.
  3. In a separate bowl, combine the dry ingredients and spice mix.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Cover the dough and chill for at least 3 hours or overnight.
  6. Preheat the oven to 350°F.
  7. Roll out the dough to ¼ inch thickness and cut out cookies.
  8. Place the cookies on lined baking sheets, spaced about 1 inch apart.
  9. Bake the cookies until they spring back when touched, adjusting time based on size.
  10. Cool the cookies on a baking sheet for a few minutes before transferring to a wire rack.
