Instructions
- Rinse and pick through the dried beans to discard any foreign objects.
- Soak the beans in cold water overnight or for 6 to 8 hours, then drain and rinse.
- Cook the soaked beans in a Dutch oven or pressure cooker until tender, about 8 to 12 minutes in a pressure cooker or 1 to 1½ hours otherwise.
- Drain the cooked beans and add the corn to the pot, stirring to combine.
- Add palm oil, onions, tomatoes, crayfish, smoked fish, garlic, ginger, smoked paprika, chicken bouillon, salt, and pepper.
- Pour in 2 to 3 cups of water or chicken stock, bring to a boil, then let it simmer for 20 to 25 minutes, stirring occasionally.
- Adjust seasonings to taste and serve.
