Cornchaff (Adalu)

Ingredients

  • 1 lb dried beans (any variety)
  • 1 lb corn (sweet boiled or any kind)
  • 1-2 cups smoked turkey, fish, or chicken
  • 2 medium tomatoes (diced)
  • 1 ½ teaspoons minced garlic
  • 1 teaspoon grated ginger
  • ½ medium onion (diced)
  • ¼ cup crayfish (smoked/dried shrimp, optional)
  • ½ - ¾ cup palm oil
  • 1 tablespoon smoked paprika
  • to taste salt and pepper
  • 1-2 tablespoons chicken bouillon (optional)

Instructions

  1. Rinse and pick through the dried beans to discard any foreign objects.
  2. Soak the beans in cold water overnight or for 6 to 8 hours, then drain and rinse.
  3. Cook the soaked beans in a Dutch oven or pressure cooker until tender, about 8 to 12 minutes in a pressure cooker or 1 to 1½ hours otherwise.
  4. Drain the cooked beans and add the corn to the pot, stirring to combine.
  5. Add palm oil, onions, tomatoes, crayfish, smoked fish, garlic, ginger, smoked paprika, chicken bouillon, salt, and pepper.
  6. Pour in 2 to 3 cups of water or chicken stock, bring to a boil, then let it simmer for 20 to 25 minutes, stirring occasionally.
  7. Adjust seasonings to taste and serve.
