Ingredients

The main ingredients

  • 1 - 1 ½ lbs Lean Ground Beef or Ground Turkey
  • ½ tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 pkg Taco Seasoning (1 ¼ oz) or 2 ½ Tbsp homemade
  • 1 can Black Beans (15 oz), drained and rinsed
  • 1 ½ cups Frozen Corn Kernels
  • 2 cups Salsa
  • 1 can Diced Green Chiles (4 oz)
  • 1 ½ cups Long Grain White Rice, well rinsed
  • 1 ¾ cups Beef or Chicken Broth, low sodium

Garnishes

  • 1 cup Shredded Cheddar Cheese
  • ¼ cup Cilantro, chopped
  • Sour Cream
  • Salsa
  • Avocado
  • Tortilla Chips
  • Hot Sauce
  • Lime Wedges

Instructions

  1. Sauté the ground beef in the Instant Pot until mostly cooked, then drain excess fat.
  2. Add onion powder, garlic powder, and taco seasoning, stirring well.
  3. Layer black beans, corn, salsa, green chiles, and rice without stirring.
  4. Pour broth over the layers, pressing the rice down gently to submerge.
  5. Seal the pot and set to Pressure Cook for 8 minutes.
  6. After cooking, perform a Quick Release of the pressure.
  7. Fluff the rice and stir the mixture before serving.
  8. Serve with your choice of garnishes.
