Spring Pea Pesto

peas, either frozen and thawed or fresh English peas

packed mixed herbs (mint, tarragon, or dill)

lemon (zest)

lemon juice

minced chives or green onion

black pepper

Instructions
- Zest and juice the lemon, and chop the herbs.
- Add all ingredients into a food processor.
- Pulse until the peas are broken down but still have some texture.
- Serve immediately or store in the fridge for up to 3 days.
