Spring Pea Pesto

Ingredients

  • 2 cups peas, either frozen and thawed or fresh English peas
  • ½ cup packed mixed herbs (mint, tarragon, or dill)
  • 1 each lemon (zest)
  • tablespoons lemon juice
  • 1 tablespoon minced chives or green onion
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • cup olive oil

Instructions

  1. Zest and juice the lemon, and chop the herbs.
  2. Add all ingredients into a food processor.
  3. Pulse until the peas are broken down but still have some texture.
  4. Serve immediately or store in the fridge for up to 3 days.
