Blackberry Coffee Cake

Ingredients

The cake

  • 1 cup blackberries
  • 1 cup almond flour
  • ½ cup coconut flour
  • 3 units eggs
  • ¾ cup full fat coconut milk
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup
  • 1 tsp baking soda
  • pinch sea salt

The topping

  • ¾ cup chopped walnuts
  • 2 tsp cinnamon
  • ¼ cup melted coconut oil
  • 3 tbsp coconut sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Line an 8x8 baking dish with parchment paper after greasing the pan.
  3. Combine all topping ingredients in a medium bowl and mix well, then set aside.
  4. In another bowl, blend all cake ingredients except blackberries until well incorporated.
  5. Fold in the blackberries, mixing well and crushing some in the batter.
  6. Pour half of the batter into the baking dish, followed by half of the topping.
  7. Add the remaining batter and topping, flattening with a spatula.
  8. Bake for 40 minutes.
