Instructions
- Prepare the crust by whisking together the flours, baking powder, and salt.
- In a separate bowl, mix the oil, buttermilk, and egg, then combine with the flour mixture to form a dough.
- Knead the dough for 2 minutes, then press into a disc and refrigerate for at least 30 minutes.
- Roll out the dough into a 12-13 inch disc and fit it into a tart pan.
- Preheat the oven to 375°F.
- Blend the cottage cheese until smooth, then add buttermilk, eggs, egg whites, and seasonings, and blend again.
- Layer some zucchini slices in the crust, sprinkling with salt, pepper, goat cheese, and walnuts between layers.
- Pour the cheese mixture over the layered zucchinis and add a final layer of zucchini.
- Place the tart in the oven and reduce the temperature to 325°F.
- Bake for 55-60 minutes until set, then cool completely in the refrigerator before serving.
- Garnish with crumbled goat cheese and crushed walnuts before serving.
