Yellow and Green Cheesy Zucchini Tart

Ingredients

Crust

  • ¾ cup spelt flour
  • cup whole wheat flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp extra-virgin olive oil
  • cup buttermilk
  • 1 egg egg

Cheese “Flan”

  • 200 g 1% fat cottage cheese
  • ¾ cup buttermilk
  • 2 whole eggs
  • 4 egg whites egg whites
  • 1 Juice lime
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 tsp dried basil

Filling

  • 2-3 whole yellow courgettes
  • 2-3 whole green courgettes
  • 75 g soft goat cheese
  • 50 g crushed walnuts

Garnish

  • 20 g soft goat cheese
  • 25 g crushed walnuts

Instructions

  1. Prepare the crust by whisking together the flours, baking powder, and salt.
  2. In a separate bowl, mix the oil, buttermilk, and egg, then combine with the flour mixture to form a dough.
  3. Knead the dough for 2 minutes, then press into a disc and refrigerate for at least 30 minutes.
  4. Roll out the dough into a 12-13 inch disc and fit it into a tart pan.
  5. Preheat the oven to 375°F.
  6. Blend the cottage cheese until smooth, then add buttermilk, eggs, egg whites, and seasonings, and blend again.
  7. Layer some zucchini slices in the crust, sprinkling with salt, pepper, goat cheese, and walnuts between layers.
  8. Pour the cheese mixture over the layered zucchinis and add a final layer of zucchini.
  9. Place the tart in the oven and reduce the temperature to 325°F.
  10. Bake for 55-60 minutes until set, then cool completely in the refrigerator before serving.
  11. Garnish with crumbled goat cheese and crushed walnuts before serving.
