  • 1 lb chicken breast, cut into bite-sized pieces
  • cups cooked brown rice
  • 15 ounces plain tomato sauce
  • 1 cup chicken broth
  • 2 tsp chili powder
  • ½ tsp cumin
  • 1 cup crushed tortilla chips
  • ½ tsp salt or to taste
  • ¾ cup grated cheddar cheese or other

  • to taste cilantro
  • to taste crushed tortilla chips

Instructions

  1. Preheat the oven to 375°F.
  2. In a large cast iron skillet, sauté the onion in olive oil over medium-low heat until translucent.
  3. Add the chicken and cook for about 10 minutes until cooked through, stirring regularly.
  4. Stir in the cooked rice, tomato sauce, chicken broth, chili powder, cumin, and crushed tortilla chips.
  5. Let the mixture simmer for 5 minutes to thicken, then add salt and other seasonings as needed.
  6. Sprinkle cheese on top and bake for 10 minutes or until the cheese is melted.
  7. Serve warm with optional toppings.
