Instructions
- Preheat the oven to 375°F.
- In a large cast iron skillet, sauté the onion in olive oil over medium-low heat until translucent.
- Add the chicken and cook for about 10 minutes until cooked through, stirring regularly.
- Stir in the cooked rice, tomato sauce, chicken broth, chili powder, cumin, and crushed tortilla chips.
- Let the mixture simmer for 5 minutes to thicken, then add salt and other seasonings as needed.
- Sprinkle cheese on top and bake for 10 minutes or until the cheese is melted.
- Serve warm with optional toppings.
