Instructions
- Cook the rice in a rice cooker and mix with lime juice and cilantro once fluffy.
- Heat oil in a Dutch oven and sear the tomatoes, onion, garlic, and guajillo chiles until browned.
- Add water and cover to simmer until the vegetables are soft.
- Blend the mixture until smooth and return to the pot to simmer for an additional 10 minutes.
- In a skillet, heat oil and cook the shrimp for 30-40 seconds per side.
- Add the sauce to the shrimp, toss, and serve over the lime rice with avocado and cilantro.
