Ingredients

Lime Rice

  • 1 cup medium-grain rice
  • cups water
  • Juice from 1 lime
  • 2 tablespoons minced fresh cilantro

A La Diabla Sauce

  • 1 tablespoon neutral oil
  • 6 pieces roma tomatoes
  • ½ piece yellow or white onion
  • 3 cloves garlic
  • 2 pieces dried guajillo chiles
  • 2 cups water
  • 1 piece chipotle in adobo
  • 2 teaspoons kosher salt

For Assembly

  • 1 piece avocado, sliced
  • More cilantro
  • 2 teaspoons neutral flavored oil
  • 1 pound shrimp, deveined and peeled
  • Limes for serving

Instructions

  1. Cook the rice in a rice cooker and mix with lime juice and cilantro once fluffy.
  2. Heat oil in a Dutch oven and sear the tomatoes, onion, garlic, and guajillo chiles until browned.
  3. Add water and cover to simmer until the vegetables are soft.
  4. Blend the mixture until smooth and return to the pot to simmer for an additional 10 minutes.
  5. In a skillet, heat oil and cook the shrimp for 30-40 seconds per side.
  6. Add the sauce to the shrimp, toss, and serve over the lime rice with avocado and cilantro.
