Ingredients

Pie Crust

  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons kosher salt
  • 1 ¼ cups unsalted butter, cold
  • ½-¾ cups cold water

Cherry Pie Filling

  • ¼ cup white sugar
  • 1 whole vanilla bean
  • 2 pounds cherries, pitted and halved
  • ¼ cup dark or light brown sugar
  • ¼ cup corn starch
  • 1 tablespoon lemon juice
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt, then grate in the cold butter and mix until crumbly.
  2. Add water gradually until the dough comes together, then divide into discs and chill in the refrigerator.
  3. For the filling, mix white sugar with the vanilla bean, then add cherries, brown sugar, corn starch, lemon juice, and salt.
  4. Roll out the first disc of dough and fit it into the pie dish, then fill with the cherry mixture.
  5. Roll out the second disc, cut into strips, and create a lattice top over the filling.
  6. Chill the assembled pie in the freezer for about 15-30 minutes.
  7. Preheat the oven and brush the pie with egg wash before baking at two different temperatures.
  8. Allow the pie to cool for a few hours before serving.
