Instructions
- Prepare the pie crust by mixing flour, sugar, and salt, then grate in the cold butter and mix until crumbly.
- Add water gradually until the dough comes together, then divide into discs and chill in the refrigerator.
- For the filling, mix white sugar with the vanilla bean, then add cherries, brown sugar, corn starch, lemon juice, and salt.
- Roll out the first disc of dough and fit it into the pie dish, then fill with the cherry mixture.
- Roll out the second disc, cut into strips, and create a lattice top over the filling.
- Chill the assembled pie in the freezer for about 15-30 minutes.
- Preheat the oven and brush the pie with egg wash before baking at two different temperatures.
- Allow the pie to cool for a few hours before serving.
