  • 1 tsp smoked paprika
  • 3 portobello mushrooms chopped
  • 1 tbsp canned chipotle pepper, minced
  • to taste salt and pepper

Loaded Veggie Nachos

  • tortilla chips
  • black or pinto beans
  • shredded cheese or crumbled queso fresco
  • salsa
  • sautéed veggies like zucchini, green or red peppers, corn, etc.
  • sour cream
  • cilantro
  • jalapeno peppers
  • green onions
  • chopped tomatoes
  • anything else you like on your nachos

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chopped onion and cook until softened.
  3. Stir in minced garlic, ground cumin, and smoked paprika; cook for 1 minute.
  4. Add chopped portobello mushrooms and minced chipotle; cook until mushroom liquid evaporates.
  5. Season with salt and pepper, then remove from heat.
  6. Top tortilla chips with the mushroom mixture and your choice of toppings.
