Ingredients

The wrappers

  • 1 package rice paper wrappers
  • 1 head butter lettuce

The fillings

  • to taste chopped cilantro
  • to taste chopped basil
  • to taste chopped mint
  • 1 lime wedge
  • 1 medium avocado
  • 1 medium mango
  • 1 slice fresh pineapple
  • 1 medium jalapeno pepper
  • 1 medium cucumber
  • 1 cup shredded carrots
  • to taste chopped peanuts and/or cashews
  • 1 cup sushi rice
  • 1 cup soaked rice noodles
  • 1 cup shredded purple cabbage
  • 1 cup baby spinach

Instructions

  1. Soak one rice wrapper at a time in very warm water until softened.
  2. Lay the softened wrapper flat and place a piece of butter lettuce on top.
  3. Add desired toppings on top of the lettuce and any sauces if desired.
  4. Roll the wrapper tightly, starting with the sides, then folding the bottom and top.
  5. Assemble ahead of time and refrigerate, or allow guests to make their own rolls.
