Spring Clean Raw Beet, Carrot, and Apple Salad

Ingredients

  • 2 medium carrots, peeled
  • 1 large red beet, peeled
  • 1 large golden beet, peeled
  • 1 large apple (sweet variety), chopped
  • 1 clove garlic, minced
  • 1 tbsp extra virgin olive oil
  • 2 tsp fresh lemon juice
  • 1 tbsp balsamic vinegar
  • to taste red pepper flakes
  • ½ tbsp pure maple syrup
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 2-3 tbsp sesame seeds
  • 3-4 tbsp chopped almonds

Instructions

  1. Grate the carrots and beets, then chop the apple and combine them in a large bowl.
  2. Whisk together the dressing ingredients: minced garlic, olive oil, lemon juice, balsamic vinegar, red pepper flakes, maple syrup, salt, and pepper. Adjust to taste.
  3. Pour the dressing over the vegetables and mix well. Let it sit for at least 30 minutes to develop flavors.
  4. Add the sesame seeds and chopped almonds before serving chilled or at room temperature over greens.
