Instructions
- Cook each tortilla in oil for 25 seconds and set aside.
- Spread about 3 ounces of tomatillo sauce in a casserole dish.
- Fill each softened tortilla with about 1.5 ounces of chicken, roll them up, and place seam side down in the dish.
- Cover the rolled enchiladas with the remaining tomatillo sauce.
- Top with Monterey Jack cheese and bake for 15 minutes.
- Serve hot.
