Ingredients

The filling

  • 8 oz Shredded Chicken
  • cups Monterey Jack cheese

The sauce

  • 2 cups Mi Tierra Enchiladas Sauce

The tortillas

  • 6 pieces Corn Tortillas

Instructions

  1. Cook each tortilla in oil for 25 seconds and set aside.
  2. Spread about 3 ounces of tomatillo sauce in a casserole dish.
  3. Fill each softened tortilla with about 1.5 ounces of chicken, roll them up, and place seam side down in the dish.
  4. Cover the rolled enchiladas with the remaining tomatillo sauce.
  5. Top with Monterey Jack cheese and bake for 15 minutes.
  6. Serve hot.
