Braised Chicken Garlic Thyme

Instructions
- Trim excess fat from the chicken and pat dry.
- Season the chicken with garlic, thyme, salt, and pepper; marinate if possible.
- Preheat the oven to 400°F.
- Heat oil in a cast iron or frying pan and sear the chicken for about 3-4 minutes on each side until slightly browned.
- Remove the chicken and set aside.
- In the same pan, sauté garlic, onions, thyme, bay leaf, and paprika for 1-2 minutes.
- Add mustard and chicken broth or water; bring to a boil and simmer for 2 minutes.
- Adjust seasoning as needed.
- Place the chicken back in the pan on top of the sauce, followed by the potatoes and vegetables.
- Bake for 35-40 minutes until the chicken is cooked through and the potatoes are tender.
- Remove from the oven and let cool before serving.
