Braised Chicken Garlic Thyme

Ingredients

Marinade

  • 1 teaspoon garlic
  • ½ teaspoon thyme
  • to taste white pepper
  • 1-1½ teaspoon salt
  • 2-3 pounds chicken thighs or legs, skin on

Main Ingredients

  • 1 large onion, sliced
  • 1 tablespoon minced garlic
  • 1 leaf bay leaf
  • 2-3 tablespoons mustard
  • 2 teaspoons fresh minced thyme
  • 1 teaspoon paprika
  • 1 pound vegetables (baby potatoes, green beans, and carrots, cut up)
  • 2 cups chicken broth or water
  • ½ teaspoon white pepper
  • to taste salt

Instructions

  1. Trim excess fat from the chicken and pat dry.
  2. Season the chicken with garlic, thyme, salt, and pepper; marinate if possible.
  3. Preheat the oven to 400°F.
  4. Heat oil in a cast iron or frying pan and sear the chicken for about 3-4 minutes on each side until slightly browned.
  5. Remove the chicken and set aside.
  6. In the same pan, sauté garlic, onions, thyme, bay leaf, and paprika for 1-2 minutes.
  7. Add mustard and chicken broth or water; bring to a boil and simmer for 2 minutes.
  8. Adjust seasoning as needed.
  9. Place the chicken back in the pan on top of the sauce, followed by the potatoes and vegetables.
  10. Bake for 35-40 minutes until the chicken is cooked through and the potatoes are tender.
  11. Remove from the oven and let cool before serving.
