Greek Lentil Salad

Ingredients

The salad

  • 1 cup Bob’s Red Mill Lentils
  • ½ long English cucumber
  • 1 large red pepper
  • 2 medium tomatoes
  • 1 medium red onion
  • cup feta
  • ½ cup chives
  • ¼ cup fresh dill
  • ¼ cup fresh basil
  • 2 – 3 tbsp fresh mint

The dressing

  • 4 - 6 tbsp Greek Salad Dressing
  • 2 tsp sea salt
  • 1 tsp black pepper

Instructions

  1. Cook the lentils according to package instructions.
  2. Drain and rinse the lentils with cold water and set aside.
  3. Prepare the Greek Salad Dressing and set aside.
  4. Dice the cucumber, red pepper, tomatoes, and red onion into small pieces.
  5. Finely chop the chives, dill, basil, and mint.
  6. In a large bowl, combine the cooled lentils, diced vegetables, and chopped herbs.
  7. Pour the dressing over the salad and toss to combine.
  8. Season to taste and enjoy!
