Instructions
- Cook the lentils according to package instructions.
- Drain and rinse the lentils with cold water and set aside.
- Prepare the Greek Salad Dressing and set aside.
- Dice the cucumber, red pepper, tomatoes, and red onion into small pieces.
- Finely chop the chives, dill, basil, and mint.
- In a large bowl, combine the cooled lentils, diced vegetables, and chopped herbs.
- Pour the dressing over the salad and toss to combine.
- Season to taste and enjoy!
