Instructions
- Cut each chicken breast in half lengthwise and pound to ½ inch thick.
- Mix flour, salt, and pepper in a small bowl.
- Dredge chicken pieces in the flour mixture.
- Heat olive oil in a large pan over medium-high heat and cook chicken until golden brown, about 4-5 minutes per side.
- Remove chicken from the pan and cover to keep warm.
- Melt butter in the same pan, add flour and whisk for 1 minute, then add garlic and cook for 30 seconds.
- Pour in white wine and simmer until reduced by half, whisking occasionally.
- Stir in chicken broth and heavy cream, cooking until the sauce thickens.
- Turn heat to low, then add lemon juice, capers, and salt and pepper.
- Return chicken to the pan and spoon sauce over the top, then sprinkle with parsley and serve with lemon wedges if desired.
