Ingredients

The chicken

  • 1 pound boneless skinless chicken breasts
  • ½ cup all purpose flour
  • teaspoons salt
  • ½ teaspoon pepper
  • 2 tablespoons extra virgin olive oil

The sauce

  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 2 teaspoons minced garlic
  • ¼ cup white wine
  • 1 cup chicken broth
  • ¼ cup heavy cream
  • 1 tablespoon lemon juice
  • 3 tablespoons capers
  • to taste salt and pepper
  • 2 tablespoons chopped parsley
  • optional lemon wedges for garnish

Instructions

  1. Cut each chicken breast in half lengthwise and pound to ½ inch thick.
  2. Mix flour, salt, and pepper in a small bowl.
  3. Dredge chicken pieces in the flour mixture.
  4. Heat olive oil in a large pan over medium-high heat and cook chicken until golden brown, about 4-5 minutes per side.
  5. Remove chicken from the pan and cover to keep warm.
  6. Melt butter in the same pan, add flour and whisk for 1 minute, then add garlic and cook for 30 seconds.
  7. Pour in white wine and simmer until reduced by half, whisking occasionally.
  8. Stir in chicken broth and heavy cream, cooking until the sauce thickens.
  9. Turn heat to low, then add lemon juice, capers, and salt and pepper.
  10. Return chicken to the pan and spoon sauce over the top, then sprinkle with parsley and serve with lemon wedges if desired.
