Black Beans and Rice
Ingredients
The base

The beans and garnish

black beans, rinsed and drained

lime juice

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cooking until tender.
- Stir in the rice and cook for a couple of minutes.
- Add cumin, chicken broth, salt, and pepper, then bring to a boil.
- Cover and reduce heat to low, simmering for 15 minutes until rice is tender.
- Stir in the black beans and let sit off heat for a few minutes to warm the beans.
- Mix in lime juice and cilantro, fluffing the rice with a fork.
- Garnish with cilantro sprigs and lime wedges before serving.
