Black Beans and Rice

Ingredients

The base

  • 1 tablespoon olive oil
  • ½ cup onion, finely diced
  • 2 teaspoons minced garlic
  • cups long grain white rice, uncooked
  • 1 teaspoon ground cumin
  • 3 cups chicken broth
  • salt and pepper to taste

The beans and garnish

  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 2 tablespoons lime juice
  • cup cilantro leaves, chopped
  • cilantro sprigs and lime wedges for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cooking until tender.
  3. Stir in the rice and cook for a couple of minutes.
  4. Add cumin, chicken broth, salt, and pepper, then bring to a boil.
  5. Cover and reduce heat to low, simmering for 15 minutes until rice is tender.
  6. Stir in the black beans and let sit off heat for a few minutes to warm the beans.
  7. Mix in lime juice and cilantro, fluffing the rice with a fork.
  8. Garnish with cilantro sprigs and lime wedges before serving.
