Instructions
- Boil water with lemongrass, galangal, chilies, and kaffir lime leaves.
- Add straw mushrooms and chicken, cooking until the chicken is done.
- Stir in coconut milk and boil for a couple more minutes.
- Turn off the heat and add lime juice and fish sauce to taste.
- Garnish with chopped cilantro before serving.
