Ingredients

The soup base

  • 1 cup water
  • 1 1/2 cups coconut milk
  • 8 oz boneless and skinless chicken
  • 20 canned straw mushrooms

Aromatics and spices

  • 1 stalk lemongrass
  • 6 leaves kaffir lime leaves
  • 6 slices galangal
  • 8 pieces bird’s eye chilies

Seasoning

  • 3 tablespoons fish sauce
  • 2 1/2 tablespoons lime juice
  • 1 tablespoon cilantro, chopped

Instructions

  1. Boil water with lemongrass, galangal, chilies, and kaffir lime leaves.
  2. Add straw mushrooms and chicken, cooking until the chicken is done.
  3. Stir in coconut milk and boil for a couple more minutes.
  4. Turn off the heat and add lime juice and fish sauce to taste.
  5. Garnish with chopped cilantro before serving.
