Instructions
- Clean and rinse the fish, then make deep slits along the bone on both sides.
- Blend the spice paste ingredients until smooth.
- Heat 3 tablespoons of oil in a wok and stir-fry the spice paste until aromatic.
- Add tamarind juice and stir-fry until the paste is smooth and slightly moist.
- Stuff the spice paste into the slits and cavity of the fish.
- Heat ¼ cup of oil in a wok and deep-fry the fish until cooked.
- Serve immediately.
