Ingredients

The pasta

  • 8 oz elbow pasta
  • 4 cups broccoli florets, chopped

The sauce

  • 1 cup raw cashews
  • ½ tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1 tsp fine sea salt
  • ½ tsp turmeric (optional)
  • ½ tsp smoked paprika
  • 1 tsp hot sauce
  • 2 tbsp lemon juice
  • 1 ¼ cups water
  • ¼ cup nutritional yeast
  • 2 cups spinach (optional)

Instructions

  1. Soak cashews in hot water.
  2. Cook pasta according to package instructions, adding broccoli in the last two minutes.
  3. Sauté onion in olive oil until softened, then stir in spices.
  4. Transfer the onion mixture to a blender and add soaked cashews, hot sauce, lemon juice, water, and nutritional yeast.
  5. Blend until smooth and creamy.
  6. Pour the sauce over the pasta and broccoli, stirring to combine.
  7. Season with salt and pepper to taste and serve.
