Ingredients

The doughnuts

  • 2 whole eggs
  • ¾ cup whole milk ricotta cheese
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons unsalted butter, melted
  • cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • zest of 1 Meyer lemon

The glaze

  • 2 cups powdered sugar
  • juice of 2 Meyer lemons
  • ¼ cup mascarpone cheese at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. Beat together eggs, ricotta, vanilla, and melted butter until smooth.
  2. Mix in flour, baking powder, sugar, salt, and lemon zest until just combined and let sit for 10-15 minutes.
  3. Heat oil to 350°F.
  4. Roll out the dough to ½-inch thickness and cut out doughnut shapes.
  5. Fry doughnuts in batches until golden brown, about 1-2 minutes per side, then drain on paper towels.
  6. To make the glaze, mix powdered sugar, lemon juice, mascarpone, and vanilla until smooth. Adjust consistency with water if needed.
  7. Dip doughnuts in glaze and let set for about 5 minutes before serving.
