Instructions
- Beat together eggs, ricotta, vanilla, and melted butter until smooth.
- Mix in flour, baking powder, sugar, salt, and lemon zest until just combined and let sit for 10-15 minutes.
- Heat oil to 350°F.
- Roll out the dough to ½-inch thickness and cut out doughnut shapes.
- Fry doughnuts in batches until golden brown, about 1-2 minutes per side, then drain on paper towels.
- To make the glaze, mix powdered sugar, lemon juice, mascarpone, and vanilla until smooth. Adjust consistency with water if needed.
- Dip doughnuts in glaze and let set for about 5 minutes before serving.
