Smoked Watermelon Gazpacho

Ingredients

The vegetables and fruit

  • ½ large watermelon, sliced in wedges
  • 3 large cucumbers, skinned and sliced lengthwise
  • 1 lb mini bell peppers
  • 2 medium shallots
  • 5 cloves garlic
  • 4 medium beefsteak tomatoes, cut in half
  • 1 large bunch basil, plus more for garnish

The dressing

  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 4 tbsp water
  • 1 heaping tbsp smoked sea salt
  • 1 tsp fresh ground pepper

Instructions

  1. Preheat the grill to 350 degrees.
  2. Slice the vegetables while the grill is heating.
  3. Place the veggies on the grill, checking frequently to prevent burning.
  4. Remove the veggies as they develop char marks and let them cool.
  5. In a large pot, combine the grilled veggies with balsamic vinegar, olive oil, water, smoked sea salt, pepper, and basil.
  6. Use an immersion blender to puree the mixture until it reaches a fine salsa consistency.
  7. Chill in the refrigerator for at least an hour before serving.
  8. Garnish with additional basil and serve with grilled bread or as a light lunch.
