Smoked Watermelon Gazpacho

The vegetables and fruit

The dressing

balsamic vinegar

olive oil

smoked sea salt

fresh ground pepper
Instructions
- Preheat the grill to 350 degrees.
- Slice the vegetables while the grill is heating.
- Place the veggies on the grill, checking frequently to prevent burning.
- Remove the veggies as they develop char marks and let them cool.
- In a large pot, combine the grilled veggies with balsamic vinegar, olive oil, water, smoked sea salt, pepper, and basil.
- Use an immersion blender to puree the mixture until it reaches a fine salsa consistency.
- Chill in the refrigerator for at least an hour before serving.
- Garnish with additional basil and serve with grilled bread or as a light lunch.
