Healthier Chicken and Zucchini Noodle Casserole

Ingredients

  • 3 cups grated zucchini
  • 6-8 slices thick whole grain bread
  • ¾ pound boneless skinless chicken tenders, diced
  • ½ small onion, grated
  • 2 cloves garlic, minced or grated
  • 1 large carrot, grated
  • ½ pound dry egg noodles (optional)
  • 1 teaspoon dried thyme
  • 2 teaspoons dried parsley
  • ½ teaspoon cayenne pepper
  • 1 cup gouda cheese, shredded
  • 2-3 cups chicken broth
  • ½ cup dry white wine or more chicken broth
  • 1 cup plain Greek yogurt
  • 6 tablespoons butter, melted
  • 2 large eggs
  • cups crushed cornflakes

Instructions

  1. Preheat the oven to 375°F.
  2. Spread the grated zucchini on a towel, sprinkle with salt, and let sit for at least 10 minutes.
  3. Grease a 9x13 inch baking dish.
  4. Layer the cubed bread in the bottom of the dish, followed by the chicken, onion, garlic, carrot, dried noodles, thyme, parsley, cayenne, and a pinch of salt and pepper.
  5. Top with gouda cheese and then add the zucchini.
  6. Pour in the chicken broth, wine, Greek yogurt, melted butter, and eggs.
  7. Mix all ingredients until the bread is moistened and evenly distributed, adding more broth if necessary.
  8. Sprinkle cornflakes on top, cover with foil, and bake for 30 minutes.
  9. Remove the foil and bake for an additional 25-30 minutes until golden and set.
  10. Let sit for 5 minutes before serving.
