Foolproof Chicken Enchilada Casserole

Ingredients

  • 1 cup sliced frozen bell peppers
  • 1 cup frozen corn
  • 1 12 oz jar enchilada sauce
  • 12 pieces corn tortillas
  • 3 cups shredded chicken
  • 1 16 oz jar mild or medium salsa
  • 1 5 oz can diced green chiles
  • 1 ¾ cups shredded cheese
  • 1 14.5 oz can refried beans

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish.
  2. Cook the frozen bell peppers and corn in a pan until softened.
  3. Layer ¾ cup of enchilada sauce in the baking dish and cover the bottom with 4 tortillas.
  4. Add half of the cooked veggies, beans, chiles, chicken, and cheese, followed by half of the salsa.
  5. Repeat the layering with another 4 tortillas, the remaining veggies, beans, chiles, chicken, and cheese, then top with the remaining salsa.
  6. Finish with the last tortillas and pour the remaining enchilada sauce over the top, adding ¾ cup of cheese.
  7. Cover with foil and bake for 25 minutes, then serve hot.
