Instructions
- Preheat the oven to 425°F and prepare a baking dish.
- Trim and slice zucchini into thin strips.
- Lay zucchini slices on paper towels, sprinkle with salt, and let sit to draw out moisture.
- In a skillet, heat olive oil and brown ground turkey with spices and garlic.
- Mix in ricotta, some mozzarella, and Parmesan.
- Assemble ravioli by arranging zucchini strips in a star shape, filling with mixture, and folding.
- Place packets seam side down in the baking dish.
- Top with remaining sauce and cheeses.
- Bake for 15 minutes and garnish with fresh herbs before serving.
