Ingredients

  • 2 medium or large zucchini or summer squash
  • 1 ½ teaspoons kosher salt
  • 1 tablespoon extra virgin olive oil
  • 1 pound lean ground turkey
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes
  • 3 cloves garlic
  • ¾ cup part-skim ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese
  • 4 tablespoons grated Parmesan cheese
  • 1 ½ cups prepared marinara-style pasta sauce
  • 2 tablespoons chopped fresh basil, thyme, or parsley

Instructions

  1. Preheat the oven to 425°F and prepare a baking dish.
  2. Trim and slice zucchini into thin strips.
  3. Lay zucchini slices on paper towels, sprinkle with salt, and let sit to draw out moisture.
  4. In a skillet, heat olive oil and brown ground turkey with spices and garlic.
  5. Mix in ricotta, some mozzarella, and Parmesan.
  6. Assemble ravioli by arranging zucchini strips in a star shape, filling with mixture, and folding.
  7. Place packets seam side down in the baking dish.
  8. Top with remaining sauce and cheeses.
  9. Bake for 15 minutes and garnish with fresh herbs before serving.
